Slow cooked beef brisket. Vietnamese style
I love meals I can just whack together in the morning, and come home after work to a home cooked meal. Great when you have 6 kids like us and businesses to run. Hearty meal with minimal effort.

You Will Need
4 tbsp
Freshly grated
Ginger

Chilli
Thinly sliced

Sliced in half lengthways
Zest of 1
Lime
Lime Juice
of 1/2 a lime

Cinnamon Sticks

Brown Sugar

Fish Sauce
60 ml
Dark
Soy Sauce

Beef Stock

Large
Capsicum
Diced
125 g
Baby Corn
150 g
Green Beans

Garlic Cloves
Crushed

Brown
Onion
Thinly sliced
1.5kg beef
Brisket
Trimmed and cut into 5cm cubes
1/3 cup of unsalted
Peanuts
Crushed
1/3 cup of fresh
Cilantro
leaves

Lime
Cut into wedges for serving

Add beans to cooker; cook, covered, a further 30 minutes.

Discard lemon grass, star anise and cinnamon; season to taste.

Dish out portions. Sprinkle beef with peanuts and coriander; accompany with lime wedges.
