A Super Easy Stir Fry for When You're Feeling Mediterranean
We made this today and it turned out Great! It was inspired by a recipe we found in a book but we took it and ran with it.
Cut onions into half rings, chop green onions, peel and slice mushrooms, mince garlic.
Saute in olive oil until onions are just starting to turn colour. Add diced eggplant. Cook on medium until eggplant is almost done. Add tomatoes (diced), rosemary, olives, parsley, lemon zest and juice. Cook about 3 more minutes. Add salt and pepper if desired.
Serve over penne, top with feta.
OPTIONS: For spice, add paprika, barbecue spice, and chili flakes.
For protein, try tofu or chicken. Cook with the onions at the beginning.
