Healthy and delicious, carrot pudding is like a super easy (and faster to make) version of carrot cake.
Carrot semolina pudding is just a perfect option for anyone looking for something healthy and sweet but high in volume at the same time! I love it for the fact that it really makes me feel full and satisfied, so I do not really fancy snacks later during the day. Of course, not that there is anything wrong with snacks ;) Another thing is that depending on the ingredients you choose, your pudding can taste of anything you want, let it be caramel or vanilla.
Peel the carrots and grate them into very small pieces. Then put grated carrots in a pot with milk and water and heat it over medium heat.
When it starts to boil, add erythritol and semolina and stir vigorously. Cook for 3-4 minutes, stirring frequently, until the pudding gets thicker.
Pour the pudding into a bowl, let it cool for a while and add your favourite toppings. I strongly recommend adding a little chocolate or peanut butter!
