A Refreshing Salad for Winter AND Summer!
These are for the little avocados you can get here in the Great White North but if you're working wih the big ones, you can probably just use one
Cut avocados in half, remove pit
Use a spoon to scoop out the flesh in chunks, into a bowl
Add diced tomatoes and cucumber.
Sprinkle with lime juice, olive oil, mint and salt.
Garnish with thinly sliced red onion rings if desired.
